DESCRIPTION

These HWK sweet coconut bites are a perfect healthy snacking option to help fuel your day, and only 81 calories per bite. Nutrient dense and full of vitamins and minerals to improve your all round health and wellness.

Fibre and antioxidants in sweet potatoes are great for gut health and cognitive functioning. Studies suggest high fibre diets may decrease the risk of many cancers including colon cancer.

Sweet potatoes are also great for gut health and contribute to healthy gut microbiome. they also help to reduce inflammation within the body.

Once prepared these will stay fresh in the fridge for up to 5 days. They’re a popular snacking option in the Howick household. For kids its a great way to sneak in those important veggies.

To increase the protein in this recipe, add 1 scoop of coconut whey isolate. This will ad 21g of protein and 120 calories per batch.

Sweet Potato 160g
 Coconut Oil 1 tsp
 Almond Butter 15g
Stevia Vanilla Extract4 drops
Oat Flour40g
Sweet Cinnamon Powder1 tsp
Coconut Sugar1 tsp

Desiccated Coconut

DIRECTIONS

1. Preheat oven to 190℃ and bake the sweet potatoes for 90 minutes.

2. Allow 6 hour for them to cool to room temperature.

3. Once potatoes have cooled, add them to a blender along with the nut butter, vanilla drops, oat flour, cinnamon powder & coconut sugar.
4. Melt the coconut oil in a saucepan and add to the mixture.
5. Blitz the mix until smooth. (Add more oat flour if too wet or add a splash of water if too dry.)
6. Remove from the blender and roll into golf ball size bites.
7. Roll each bite in desiccated coconut.
8. Set for 2 hours in the fridge and enjoy.
9. Makes around 6 bites
