Baked Banana Pancake

Healthy doesn’t mean boring. Our baked banana pancake is low calorie, high protein and extremely filling. Very easy to make and great for gut health. 

An indulgent taste without the calories. This meal makes a great breakfast, lunch, pre workout meal or even as a higher calorie snack. 

Beta glucans found in oats have many health benefits. Some of which include: immune boosting, anti carcinogenic, reduce diabetes risk, lower blood pressure and prevent cardiac disease.

Why not get creative with your toppings. Add Fage 0% yoghurt to boost the protein content. 

Or perhaps try layering pancake with berries. 

Even add some low calorie Halo ice cream.

Or get some skinny syrups which come in plenty of flavours and are visually calorie free. Available here.

For a more fragrant taste, oat flour can be substituted for coconut flour or almond flour. Even use grounded rolled oats for a more course pancake

INGREDIENTS

METHOD

  • 1 large – banana
  • 50g – oat flour 
  • 5ml – vanilla essence
  • 30g – blueberries
  • 100ml – egg whites
  • 1 tsp – baking powder
  1. Pre heat oven to 190℃. in a bowl mash the banana add oat flour, baking powder & vanilla essence  to the same bowl. 
  2. Mix together well.
  3. In a mixing jug – beat the egg whites for 3 minutes. add them to the bowl and mix well. 
  4. Add parchment paper to a cake tin and pour the mix on top (for one giant pancake). 
  5. Place blueberries in with the mixture.  
  6. Bake for 18 minutes until brown & cooked through.
  7. To create smaller pancakes use multiple muffin tins and place them all in the oven.
